    Zucchini Noodles with Sundried Tomato Sauce

4 zucchini, peeled and sliced into noodles

4 medium tomatoes

4 cloves of garlic

6 T olive oil (extra virgin)

1 tsp paprika

12 sundried tomatoes, soaked for @ 2 hrs

1 T sea salt

1 tsp black pepper

1 tsp rosemary

1 T oregano

12 dates, pitted

  * Blend ingredients until smooth and pour over the zucchini noodles.

 

                              Hazelnut Torte

 2 C raisins

2 C hazelnuts (180 g)

1 C dates, pitted

½ lemon, juiced

pinch of sea salt

 

Soak the dates in just enough water to cover for an hour or more.  In a food processor combine raisins and hazelnuts and process as fine as possible.  Place the mixture in a bowl and knead into a fudgy ball of dough.  On a plate or in a spring-form pan, mold the dough into a circle @ 3cm thick to form a torte.  Remove the dates from the water and blend them with the lemon juice.  Spread the lemon/date mixture on top of the torte.  Decorate with fresh fruit.  Serve immediately or chill for more firm of a texture.
