1 C coconut meat
1/2 C coconut water
1/2 C cashews, soaked in 1 C water with 1 split vanilla bean, for 2 hrs
1/3 C dates, pitted
1/2 tsp sea salt
* Strain and rinse the cashew/vanilla mixture, discarding the water. Blend all ingredients until smooth. Use as a topping for desserts or drinks, as you would whipped cream.

1/4 C almond pulp
2 T olive oil
1/4 tsp salt
1/4 tsp rosemary
1/4 tsp black pepper
1 garlic clove
1 T lemon juice
* Blend ingredients with a blender/food processor. This is a thick sauce, mix by hand with your raw noodles and the mixture becomes creamy. Enough sauce for one spiralized zucchini and one hungry person!

2 1/2 C almond milk
5 ears of corn on the cob, shaved
1 small avocado
sea salt to taste
* Set aside a handful of corn kernels. Blend everything else in a blender. Pour into a bowl, add the handful of corn and stir, adding sea salt to taste.
