Miner's Lettuce

Posted by Jackie Hitchcock on May 11, 2012 at 3:55 AM

On a recent visit to Vancouver Island, I had the pleasure of gathering and feasting on one of my favorite potherbs, the often overlooked, Miner's Lettuce.  I love the mild taste and texture of this wild green!

Indigenous to North America, Miner's Lettuce can be found growing in moist, shaded areas of British Columbia in the Spring.  This plant is easily identified by it's unique leaf shape and flowers.

Miner's Lettuce is high in essential nutrients, including Vitamin C, Vitamin A and Iron, give it a try, you'll be glad you did!
